Sunday Sunday Sunday

Kate, her dad and I had a late night last night. We are resolved to clear up her sleeping "issues"(i.e. no real "nap time" and a later bed time than most children we know-9:15). We are armed and ready with a new book and a new attitude...we shall see how it goes.

This morning we did rise and shine with happy faces. Martin and Robin were in from Houston and we met them at a restaurant off 34th called Starlite for brunch. It had a pretty limited menu but we all thought the food was excellent. Dan and I will probably go back for dinner(alone!) sometime...

Later on, Aunt Funny decided to come into town. We spent the afternoon with her and County Line BBQ. We were home, however, to put Kate in bed by 7:45...crossing our fingers she makes it through the night.

When I was making banana muffins last night you would have thought we were trying to make her test them or something. They actually turned out pretty good and it did not hurt that cute Tyler Florence is the source. Banana Nut Muffins (No pictures since they were taken to Dan's office early this morning and did not survive past 8am).

Before there are any calls to CPS, she has recovered from my use of the mixer(and food processor, disposal, electric toothbrush).

Children's Assessment

So we went to visit our friends at Children's Hospital, Mary and Yvonne. Right away, to prove that she really is developmentally catching up, she screamed and screamed the minute Yvonne or Mary tried to take her from mom (i.e. separation anxiety with "crisis response by child" which should start between 12-18 months!!).
Kate now weighs 19lbs. 13oz and is still in the 25-50% for twelve month olds. Her "catch up" physical growth has slowed down but her developmental growth is still on the rise. Mary administered the Bailey test which measures where a child is developmentally in motor and mental skills. Overall, Kate tested as a 10-11 month old for both segments. We are so proud!

Kate's new jail

OK so Miss Kate is crawling all over the place. I can't turn my back for a second or she is G-O-N-E! She is also pulling up on tables and chairs and the dishwasher...so we realized that we need to lower her crib before she pulls up and crawls out. The result? Kate in jail.


In other news, I butterflied shrimp for the first time ever and then grilled them(another first in grilling for me too). It was a recipe try-out from Cooking Light and we both thought it turned out pretty good. Spicy Grilled Jumbo Shrimp

Peanuts and Pasta

OK so we had a tough workout at Stroller Fit this morning and thought it best to come home and bake cookies! I had a bunch of leftover peanuts and these cookies used them all up!

Triple Play Peanut Butter Cookies
1 cup butter -- very soft
1 cup dark brown sugar -- (8oz)
1 cup sugar -- (7 oz)
1 1/4 cups peanut butter -- (11 7/8 oz)
1 teaspoon vanilla extract
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 eggs
2 2/3 cups flour -- (11 1/4 oz)
1 1/4 cups chopped dry roasted salted peanuts -- (6 1/4 oz)
1 1/3 cups peanut butter chips or chocolate chips -- (8 oz)

Preheat oven to 350°. Line baking sheets with parchment.

Cream butter, sugars, peanut butter, vanilla, baking powder, baking soda, and salt.
Add eggs one at a time. Stir in the flour, nuts, and chips.

Drop by tablespoonfuls(or use a 1/2in ice cream scoop) onto prepared sheets. Bake for 12-14 minutes, until set and brown around the edges. Remove from oven and cool on pan 5 minutes before transferring to wire racks to cool.
Makes about three dozen very hefty cookies


We quickly drove to Dan's office and dropped the whole load off! Kate slept most of the drive home but was up and ready to cook once we got home. I am trying a new recipe for dinner. I figure it can't fail since most of the ingredientss are things Dan loves (three kinds of cheese, beef, pasta, oh and did I mention three kinds of cheese?)

Kate was a HUGE help....

Here is the recipe....(my notes are at the bottom)

Beef and Cheese Manicotti
Recipe courtesy Giada De Laurentiis


4 teaspoons olive oil
1 medium onion, coarsely chopped
1 pound ground beef
Salt and freshly ground black pepper
14 (8-ounce package) manicotti (I used large shells so I could spread out the portions)
1 (15-ounce) container whole-milk ricotta(I used low fat)
3 cups shredded mozzarella
1 cup grated Parmesan
2 tablespoons chopped fresh Italian parsley leaves
2 garlic cloves, minced
3 cups marinara sauce (I used more-we like marinara sauce)
2 tablespoons butter, cut into pieces

Heat a heavy medium skillet over medium heat. Add 1 teaspoon of the olive oil, onion and ground beef. Season with salt and pepper. Saute until the meat browns and the onion is translucent, about 5 minutes. Remove from the heat, and cool.

Brush 1 teaspoon of oil over a large baking sheet. Cook the manicotti in a large pot of boiling salted water until slightly softened, but still very firm to the bite, about 4 to 6 minutes. Using a slotted spoon, transfer the manicotti from the pot to the oiled baking sheet and cool.

Meanwhile, combine the ricotta, 1 1/2 to 2 cups mozzarella cheese, 1/2 cup Parmesan, and parsley. Add the garlic, salt, and pepper to taste, and mix. Stir the cooled meat mixture into the cheese mixture.
Preheat the oven to 350 degrees F.

Brush the remaining 2 teaspoons of oil over a 13 by 9 by 2-inch glass baking dish. Spoon 1 1/2 cups of the marinara sauce over the bottom of the prepared dish. Fill the manicotti with the cheese-meat mixture. Arrange the stuffed pasta in a single layer in the prepared dish and spoon the remaining sauce over.

Sprinkle the remaining 1 1/2 cups of mozzarella cheese, then the remaining 1/2 cup of Parmesan over the stuffed pasta. Dot entire dish with the butter pieces. Bake the manicotti uncovered until heated through and the sauce bubbles on the sides of the dish, about 30 to 35 minutes. Let the manicotti stand 5 minutes and serve.

Notes: I am making recipes that I can split up and freeze so that Dan has something to eat while we are in Idaho. For this dish I made 2 8X8caserole dishes with 8 stuffed shells each and two individual size portions with 4 stuffed shells each. I was able to use all of the "stuffing" but I did have some shells leftover. I also needed more marinara sauce to cover all the dishes (I think 2 jars would not be over doing it).

Rained In

Today was a day of rain showers so it was nice to be inside playing with all our new stuff! I'll admit we have been a little lax(bad parents, bad parents) and only got around to taking the Leap Frog table out of the box today...it is a BIG hit. She already loved the Leap Frog push toy that her Cousin Brooke sent her but she is unable to pull herself up without me. The table can be played with while kneeling and you can see Kate has figured that out...
She also likes to stand up (but only when I am around to catch her!)

Thanks to all who gave Kate new books! There is not one we have not already read at least twice due to our "rain in"(but oh so wonderful to have new stuff to read!)

Going in and Flying Out...

Kate's birthday also meant that it was time to move out of the rear-facing car seat(yea!). Her Nana and Beboo brought a car seat (that we bought from the Boettcher's) down from Dallas and it is so chic!

She is definitely now riding in style (and I love being able to see her face as we drive!!!)

Tonight we said good bye to the travelers from Idaho, Queenie and Grandad. So sad for us all but Kate and I will see them again in exactly 44 days....

Testing 1, 2, 3

It is toy land at our house after the big first birthday! After a great weekend, our day was one of recovery and fun!

First, we taught Strollerfit at Town Lake. It was really hot but Kate was able to fit in a long nap during the most intense portion of the workout. We raced home afterward because we had a 1pm appt at UT. The child psychology department had contacted us and wanted to perform some basic tests on Kate.

During the tests, Kate sat on my lap in front of a TV screen that was flashing various faces. The psychologists were judging her reactions to the photos. I was unable to see the faces due to dark glasses on my eyes but apparently Kate had some pretty funny reactions. Not sure when the study will be published but they are "testing" over one hundred children of varying ages. For our "trouble" Kate received a cup and t-shirt(her dad loved the wording on the shirt "Graduate" with Bevo pictured below).


Later construction was completed on Kate's new "house".

Kate is already thinking she needs to find a good landscaper...

Birthday Cake Finale

Kate's Birthday cakes are pictured below. These are the "Before" pictures because the "After" are pretty ugly (i.e. both cakes were pretty good with some Blue Bell ice cream(but what isn't??)).

A first birthday for a princess...

Kate had no idea when she woke up this morning what the day had in store for her!

Our day truly began with lunch at Vivo. Yes, THE Vivo and joining us were my parents(Queenie and Grandad), my Granny, Aunt Julie, Aunt Betsy, Aunt Nancy and Uncle Grant. Kate was the life of the table and lunch was fabulous(as always). Usually, Vivo is the beginning and end of a good day but much more awaited us today!

Next onto Queenie and Grandad's house for a nap. She must have known that something was coming because Kate took the first two hour nap she has had since our trip to Idaho.

Three o'clock rolled around, the sun came out and the Benzon's(Nana and Papa), Aunt Christine, Uncle Gary and Cousin Ryan all joined us with Sue and Jeremy just behind them.


Kate's first birthday was so special for so many reasons.

A good time was had by all...especially the girl in the pink tiara....

Peanut Butter Cranberry Chocolate Chip Cookies

Doesn't the name say it all!?! So much cookie, so little time...The recipe initially came from a web board but I added my own twist (see the note at the end). Dan's office got the first batch and the second hit the table near Kate's birthday cake. Here what is all in it....

Oatmeal Peanut Butter Chocolate Chip Cookies

1/2 cup shortening

1/2 cup margarine, softened

1 cup packed brown sugar

3/4 cup white sugar

1 cup peanut butter

2 eggs

1 1/4 cups all-purpose flour

1 1/4 cup quick-cooking oats

2 teaspoons baking soda

1 teaspoon salt

1 1/2 cups semi sweet chocolate chips

5 oz package of dried cranberries(plain or cherry flavored)

Preheat oven to 325 degrees F (175 degrees C). 2 In a large bowl, cream together shortening, margarine, brown sugar, white sugar, and peanut butter until smooth. Beat in the eggs one at a time until well blended. Combine the flour, baking soda, and salt and oats; stir into the creamed mixture. Drop by teaspoonfuls onto ungreased cookie sheets. Bake for 11 minutes in the preheated oven, or until just barely puffed and starting to turn light brown. Don't over-bake. Cool and store in an airtight container.

Notes: I used unsalted butter instead of margarine so I added another teaspoon of salt. The cranberries are an addition from the original and I used natural peanut butter. Also, the batch that I sent to Dan's office used mini chocolate chips with great(maybe even better??)results.

Here was the biggest help during the baking of these cookies(think she sampled any??)

Mac 'n Cheese

Kate is now officially in the world of real food...well sort of. After a long shopping adventure at Costco, Mom, Kate and Queenie decided that lunch at Luby's would be perfect.

Luby's has been a Wood family "staple" since I was little and someone always orders the macaroni and cheese. Mom and I both ordered it today and I have never seen Kate stare at our spoonfuls so intently. Queenie broke first and offered a bit to Kate..the rest is now history(as was the remainder of our mac 'n cheese).

Happy Birthday Sweet Baby Kate

Testing Cakes-Take 1

Life is finally getting back to normal after my test this weekend. Dan was Superdad all weekend and how lucky am I that he is so good at it!
I have started testing cakes to make for Kate's birthday party this weekend. Here is attempt number one. The cake itself tastes much like you would find on any birthday cake(slightly bland but moist) and it is a cream cheese based icing. I have included the recipes below.



Bonnie Butter Cake

2/3 cup soft butter

1 3/4 cup sugar

2 eggs

1 1/2 tsp. vanilla

3 cups Cake flour or 2 3/4 cup all purpose flour

2 1/2 tsp. baking powder

1 tsp salt

1 1/4 cups milk

Heat oven to 350ยบ. Grease and flour two layer pans. 9" or 13x 9". Cream butter, sugar, eggs and vanilla until fluffy. Beat 5 minutes.,high speed on mixer or by hand. Blend flour, baking powder and salt. Mix in alternately with milk. use low speed on mixer. Bake layers 30-40 minutes, oblong 45-50 min. Cool 10 miutes turn out on rack and let cool completely before icing.

Cream Cheese Icing:
1 Pkg (8 oz)cream cheese, softened
1/4 cup Butter, softened
1/2 tsp Vanilla
1 cup Powdered sugar

In bowl, beat cream cheese with butter until smooth. Beat in vanilla. Beat in sugar, one-third at a time, until smooth. Spread over top of cake. (Make-ahead: Cover loosely and refrigerate for up to 1 day.)

Dressed to Impress


Yesterday, Kate put on her Fourth of July dress just after she decided to try and pull up on Queenie's coffee table. It was a first for her and luckily I was right behind her to catch her as she fell.
Today brought another new trick. No one can say that this child was not listening and learning as her mom did Prenatal Yoga. Kate has almost perfected the downward facing dog and was able to demonstrate it for her dad tonight.

Crawling to the Fourth

Last night we had lift off! Kate was able to move her legs and crawl to us. So far she has found it to be a little slow going but we know that will not last.

This morning also gave us something new-a second tooth! It sprouted right next to the first one and was the likely cause of a napless day yesterday.

Kate and I are spending today cooking in preparation for the Fourth of July. Our friends from Dallas, Ted, Steph and their baby Rex are all headed here for the weekend. We aren't making anything fancy but are trying a new breakfast casserole, zucchini bread, cobbler, and two dips. We shall she how they are received versus the rest of the old standbys that will accompany them.
